What ratio should you use for soffritto?
A soffritto ratio of 2:1:1 means two parts onion, one part carrot and one part celery; equal parts are another published approach. Follow the finished dish's recipe first. For a repeatable starting calculation, use prepared vegetable weights: 200 g onion, 100 g carrot and 100 g celery make 400 g at 2:1:1. That is a vegetable allocation, not a complete recipe or a universal Italian rule.
The important detail is what “part” measures. A whole onion, a cup of chopped onion and 100 g of prepared onion are three different instructions. Write the ingredient order and measurement basis beside the numbers before shopping or adjusting anything.
Why do published recipes give different ratios?
Great Italian Chefs describes a 2:1:1 onion-carrot-celery pattern. Its ingredient list specifies two medium onions, one carrot and one celery stick. Those item counts do not establish a measured weight ratio. Our gram examples below are explicitly calculated allocations, not a conversion of that list.
GialloZafferano describes a 1:1:1 approach. Its preparation calls for 3.5 oz each of the chopped carrot, celery and onion. Although the shopping list uses different numbers of vegetables, the prepared amounts are equal by weight.
That distinction explains why counting ingredients can mislead. “Three celery ribs” and “one carrot” do not necessarily mean three parts celery to one part carrot. The recipe may be specifying the amount obtained after preparation.
Neither example establishes one ratio for all Italian dishes. Compare the actual quantities and their units, not just the headline claim that a base is traditional.
How do you calculate a batch by weight?
Choose the total prepared vegetable weight, then divide it by the sum of the ratio's parts. Keep the order onion:carrot:celery throughout.
For 2:1:1, there are four parts. A 400 g allocation gives 100 g per part: two parts onion weigh 200 g, and each other vegetable weighs 100 g.
These are original arithmetic examples, not cooked or taste-tested recipes:

Each row sums to its stated total. The table excludes oil, butter, salt, herbs, meat and every later ingredient. It therefore says nothing about the finished sauce's weight, portion count or cooking time.
For our weighing method, measure the edible vegetables after the peeling and trimming your recipe requires. Use the scale's tare function with a suitable empty container, following its instructions, so the container is not counted as onion.
Can you use cups instead?
Yes, when the recipe supplies volume measurements. Keep them as volume measurements rather than treating a cup as a fixed gram amount.
Elena Davis's Cucina by Elena recipe lists approximately one cup of diced onion and half a cup each of carrot and celery. That is a clear volume-based example of the onion-led pattern. Its approximate vegetable counts are shopping guidance alongside those volumes.
A cup of one chopped vegetable need not weigh the same as a cup of another. If you want your own weight record, weigh the actual prepared quantities; do not invent an exact conversion from a photograph or an assumed onion size.
Choose one measurement system for the calculation. “200 g onion, half a cup carrot, one celery stalk” may be a usable recipe instruction, but those mixed units do not prove a numerical ratio without additional measurements.
Does Bolognese always need twice as much onion?
No. The Bologna Chamber of Commerce's published recipe, deposited in 2023 by the Accademia Italiana della Cucina, lists approximately 60 g each of onion, carrot and celery. The item descriptions are half an onion, one carrot and one celery stalk.
Those stated weights form an approximately equal-weight base: nominally 180 g of these three vegetables. They are part of that particular ragù, not instructions for making every meat sauce. Follow its complete recipe if that is the dish you intend to prepare; extracting the vegetables alone does not supply the meat-cooking or food-safety method.
For a bean soup or tomato sauce, use that recipe's quantities instead of borrowing Bolognese's allocation merely because both begin with aromatics. The sauce's other ingredients matter too; our passata and crushed-tomato comparison addresses a separate texture decision.
How can you adjust without changing everything?
First record the starting allocation and the finished dish. Our editorial recommendation is to change one vegetable's share deliberately while making clear where its weight went.
For example, a fictional 400 g record starts at 200 g onion, 100 g carrot and 100 g celery. A second allocation might use 220 g onion, 80 g carrot and 100 g celery. The total remains 400 g: 20 g moved from carrot to onion.
That is not simply “20 percent less soffritto.” Carrot fell by 20 percent of its original 100 g, while the total did not change. The second allocation is 55 percent onion, 20 percent carrot and 25 percent celery by prepared weight.
This is a calculation exercise, not evidence that the second sauce tastes better or less sweet. Note the actual result when you cook a complete recipe safely. Changing vegetables, tomato product, salt and cooking method together makes it harder to know which decision you preferred.
What should go on your next-batch note?
Use a short record rather than a score:
- Finished dish and recipe source.
- Prepared vegetable amounts and measurement units.
- Whether the amounts were copied, scaled or intentionally changed.
- Relevant recipe instructions you followed, including cut and cooking method.
- Your observation of the completed dish.
- One proposed change for another occasion.
Keep an observation separate from an explanation. “The carrot pieces remained noticeable” describes a result. “The ratio caused it” assumes more than the note establishes. Before changing quantities, check whether you also changed the preparation.

What preparation safeguards still apply?
The FDA's produce guidance advises washing produce under running water before preparation, including before peeling. Do not wash it with soap or detergent. Start with clean hands and equipment, keep produce separate from raw meat and its utensils, and follow refrigeration instructions for pre-cut produce.
Keep known allergens and diners' dietary requirements separate from a ratio experiment. Do not improvise an allergen substitution or assume a small amount is acceptable. The examples here provide neither a storage plan nor directions for adding water to hot fat. Use a complete, suitable recipe for cooking.
The practical starting point is simple: choose the dish, write the units, check the sum, and record any change. Precision about those decisions is more useful than arguing that every pot needs the same proportion.
